Your beverage distributor is largely chosen for you by franchise territory. Your line cleaner is not — this is one of the few beverage decisions that is genuinely yours. Ohio requires beer dispensing lines, faucets, taps and barrel tubes cleaned not less than every fourteen days, and requires the permit holder to keep a signed record card of every cleaning on the premises. The rule sits with the Division of Liquor Control, not your health district, which is why it is so often missed until someone asks to see the card.
What to ask before you hire
Take this into the call. No vendor gets to edit this list.
- What interval are you quoting, and does it meet the fourteen-day rule for beer? Wine and mixed beverage systems run on a thirty-day clock and are frequently left off the contract entirely.
- Will you sign the record card at the time of service, every time? The rule requires the date, the method used, and the signature of the person who did the work — and the obligation to produce that card is the permit holder’s, not yours. Get it signed on site rather than reconstructed from invoices later.
- What method do you use — caustic, acid, or both, and on what schedule? Ask what each one removes, because they do different jobs and a program that only ever runs one of them is only doing half the work.
- Do you clean the faucets and couplers themselves, or only flush the lines? Disassembling and soaking hardware is where a real cleaning differs from a fast one.
- Will you balance the system and show me the numbers? Foam is usually a balance problem, and beer poured down the drain is money that never appears as a line item.
- Who owns the equipment — me, you, or my distributor? Ownership decides who pays for repair, and it is worth knowing before something fails on a Friday.
- What is the response time when a system goes down mid-service, and is there an after-hours number?
- For a new build or a remote system: what is the run length, is it glycol or air cooled, and where does the power pack live? These decide your ongoing cost long before they decide your beer quality.
- Do you also handle the walk-in cooler side, or only the draft side? A keg cooler that will not hold temperature is a refrigeration problem being blamed on the beer.
