Fresh oil supply, used cooking oil collection, and grease trap/interceptor pumping — plus the manifests you need to keep on file.
Three services that often get confused: fresh fryer oil supply, used cooking oil collection (frequently free, sometimes paid to you), and grease interceptor pumping (a cost). Some vendors now bundle the first two into a closed-loop system with tanks plumbed to your fryers. Interceptor service generates paperwork the health and sewer authorities may ask for.
What to ask before you sign
Take this into the call. No vendor gets to edit this list.
- Are you quoting fresh oil supply, used cooking oil collection, grease interceptor pumping, or some combination? They are separate services and separate contracts.
- For waste oil: do you pay for oil, collect it free, or charge? Rates move with commodity prices — ask how often yours resets.
- For a closed-loop or bulk oil system: who owns the tanks, what happens to them if I switch vendors or close, and what does installation require of my back-of-house space?
- Do you provide and maintain the outdoor collection container, and is it lockable?
- For interceptor service: will you leave a manifest each visit, and do you file required reporting with the sewer district on my behalf?
- How much notice do you need for an off-schedule pump-out?
- What is the contract term and the cancellation clause? Multi-year auto-renewing oil contracts are common — read before signing.

Ask who owns the tanks, what the install requires of your back-of-house space, and what happens to the equipment if you switch vendors or close.
