Most useful at two moments: before you submit plans for a new or remodeled kitchen, and when you have picked up repeat critical violations you cannot resolve on your own. Before you hire anyone for training, though, check your own health district — CCBH runs the Person-In-Charge course for $30 and ServSafe manager certification for $185 with the course, or $65 for the exam alone. Consultants earn their fee on plan review, HACCP plans, and mock inspections, not on certification you can buy at cost from your regulator.

  4. Do you provide certified food protection manager training and proctored exams, or only the course?
  5. Will you attend an inspection or a hearing with me if it comes to that?
  6. What is the fee structure — hourly, per visit, or per project?
