Sharpening and slicer service for commercial kitchens — by route and exchange, or by drop-off.
There are two different services under one name, and the difference decides whether your line actually runs sharp. A route and exchange program swaps sharp knives in on a schedule, so nothing is ever out of the building. Drop-off sharpening is cheaper per edge but means being a knife down until it comes back, which is why kitchens on drop-off drift toward dull. Slicer blades are a third thing again, usually serviced by whoever repairs the machine.
What to ask before you hire
Take this into the call. No vendor gets to edit this list.
- Is this exchange or drop-off? On an exchange program you are renting an edge, not buying a service, and you should never be short a knife.
- What is the route interval, and can it be adjusted by season? A kitchen running twice the covers in July needs a different cycle than the same kitchen in February.
- How much steel does the process remove? Aggressive grinding puts a fast edge on and shortens the life of the knife. Ask what method they use and how they check it.
- Do you handle serrated edges, and how? Serrated blades need a different process and some services will not touch them.
- Do you service slicer, saw and grinder blades, or only hand knives? These often sit with different vendors and it is worth knowing which of yours is covered.
- What happens to a knife that comes back damaged or over-ground, and is there any recourse?
- For drop-off: what is the actual turnaround, and do you hold a spare set so I am not short on a Friday?
- Do you offer knife skills or maintenance coaching for staff? A honing steel used correctly between sharpenings extends every interval you pay for.
