Worth distinguishing two things that get confused: a plumber installs, repairs, and clears your grease interceptor; a licensed hauler pumps it out and gives you the manifest. You will likely need both. Plumbing also drives three items on your health department plan review — interceptor location and capacity, direct vs. indirect drain designation, and hot water capacity — so a plumber who has been through plan review locally is worth finding before you build.

What to ask before you hire

Take this into the call. No vendor gets to edit this list.

  1. Have you worked on commercial kitchens specifically, and have you been through health department plan review in this jurisdiction?
  2. Do you service grease interceptors — and do you also pump them, or do I need a separate licensed hauler for that? Most plumbers do the first, not the second.
  3. Do you hydro jet, or only snake? Grease lines usually need jetting; snaking bores a hole through grease and it closes again in weeks.
  4. What is the emergency response time, and what is the after-hours rate? A backed-up floor drain during service is a closure, not an inconvenience.
  5. Do you do backflow prevention testing and file the certification with the water authority?
  6. Can you size and document hot water capacity and interceptor capacity for a plan review submission?
  7. Do you offer a preventive drain maintenance agreement — scheduled jetting is far cheaper than an emergency call on a Saturday night?
  8. Are you licensed, bonded, and insured, and can you provide the license number?
